OK, so I have taken a little artistic licence with the naming of this dish, the linguine is merely a reference to the strips of carrot, don’t shoot me.
For 4 people as a side dish, you will need:
2 fat carrots
a bag of water cress
a good handful of sunflower and pumpkin seeds
2tsp ground cinnamon
1tsb runny honey
1tbsp quality olive oil
juice of half a lemon
Toast the seeds in a dry pan. Set aside.
Segment the tangerines, ‘ribbon’ the carrots and wash the watercress. Add to a bowl.
Mix the spices, oil, lemon and honey and stir well.
Pour the dressing over the salad and stir through, cover with the toasted seeds.
