It’s my favourite food day of the week – it’s Veg Box Day! So once I’ve been to Villa Bologna to collect my goodies, I’ll be knocking up this warm salad. Its simple but so flavoursome.
You need to blanche 6 baby asparagus spears, a small head of fennel cut into chunks and a handful of fava beans. Mix these with chicory or leaves of your choice; kale or spinach work well, and then douse with a quality olive oil based vinaigrette.
I tear some fresh ricotta over this and add a seed mix sometimes. Keeps me going till cheese and biscuits o’clock.
