For two people, you will need 4-6 slices of prosciutto, 2 eggs (whisked), chopped chives and grilled peppers and a handful of roughly chopped cheese (of your choice).
Pre heat the oven to 160c.
Line a muffin tin with prosciutto, making sure there are no gaps. Mix the grilled peppers into the eggs and pour into the prosciutto cups. Sprinkle on the cheese and cook for 10 minutes, or until the mixture is set. Sprinkle the chives if desired, and serve with leaves.
