Valentine’s breakfast using rose petal jam

Nothing beats breakfast in bed. Make this for Saturday morning and earn extra points.

Wash and dry 400g of rose petals and sprinkle with 400g caster sugar. Rub these together until a ‘mush’ forms and leave for  a minimum of 2 hours. Add this to 250ml water in a pan and stirring constantly, heat for 15 minutes, when the liquid should appear syrupy. Add 2 tbsp rose water and the juice of two lemons and stir in well. Seal any leftovers in sterilised jars after enjoying with your someone special on toast, in bed……
