I usually cook more potatoes than I need for this dish, as some don’t make it to the final round.
1kg new potatoes, halved
4 medium eggs
juice and zest of 1 lemon
Good handful of chives, chopped finely
1 bunch of celery, chopped to 1 inch pieces
Boil the potatoes for about 15 minutes until a knife easily cuts through. Boil the eggs for 6 minutes, allow to cool and remove the shells and slice.
Mix the mayonnaise with the lemon juice and zest, and add in the chopped chives, and then cover the potatoes with the mixture. Fold in the celery and gently, the egg slices.
Serve as a side dish, or add cooked bacon and prawns and serve as a starter.
