This is luxury and quick enough to do on a miserable Monday morning.
Put the oven in at 180C and while it’s warming up, lightly toast a thick slice of bread (per person).
Place the toasted bread on a baking tray and score a square shape about 2 inches in diameter and press down this loose middle. Sprinkle grates fontina cheese around the edge and drop 2 egg yokes in the centre, and bake in the over for 3 minutes / till the cheese melts.
Remove from the oven and break the yolk and drizzle in a teaspoon of truffle oil and season.
Once demolished, you can take in any kind of day with a massive smile on your face.
